Any Time of Day Coffee Cake

1 box yellow cake mix
2 tsp. vanilla
3/4 C. oil
2 small boxes instant vanilla pudding
4 eggs
1 C. water
Mix above ingredients and beat for 5 minutes.
Pour into a greased 9x13 pan.

TOPPING:
3/4 C. sugar
1 Tbsp. cinnamon
1/2 C. chopped nuts *optional*
Mix together and sprinkle over cake mixture.
Swirl with a fork.

Bake at 350 for 45 minutes.
Freezes well
